Fork
mixers are traditional mixing systems
specially designed for the production
of French style products such as
baguettes and brioche. The distinguishing
feature of this type of mixer is
its oblique mixing tool, but equally
important with the Sancassiano system
is the motorised bowl which is optimally
controlled by means of an inverter
to replicate the traditional system
of manual bowl braking. Possibilities
exist for integration with bowl
elevators and automatic
mixing systems.
