Twin arm mixing technology
involves lifting part of the dough
with one arm, compressing it and
then stretching it again. This simulates
the traditional manual action of
the baker working at a table and
preserves the integrity of the ingredients
and the final product. Twin arm mixers
can also be used outside the bakery
industry for the production of certain
cheeses such as mozzarella. Also
available in a fixed
bowl version.
