All Revent Rack Ovens may be equipped with the Revent Oven Computer. The memory capacity can store up to 500 separate user defined programs. Why use a computer controlled oven?

The experienced oven operator knows exactly how the baking cycle should be carried out with regards to temperature changes and steaming. He knows that the initial temperature has to be high and that powerful instant steam favours good rise and good shine. He knows that extended exposure to steam tends to create a tough crust and that he has to reduce the temperature in order to avoid premature formation of crust that browns long before the crumb has properly baked. At the end of the bake he increases the temperature to prepare for the next bake. To repeat the process uniformly is almost impossible:

  • Because of other duties, operators may forget to inject steam at the right time or to operate the damper properly.
  • If the operators are unskilled, oven tending is often improvised, but then again, even experienced professionals can make mistakes which result in spoiled batches.
  • A user-friendly computer controls the oven more accurately and the time gain can allow staff to carry out other tasks.

Steam control

All shiny types of products need steam at the beginning of the bake. Some of them need further steam at some time during the baking cycle. The Revent computer guides and controls the first and two further steam cycles with different parameters for steam volume and length of steam time. After the steam cycle, certain products need to be baked in a dry atmosphere. Therefore the damper must be opened up for a short while after steaming to release the moisture. These products may also require a crisp crust which means that the damper needs to be opened during the final phase of the bake cycle. The Revent computer controlled damper operation permits opening and closing the damper up to three times during a baking cycle.

Modem for pc

This will ensure full control from an office or other location of all production phases in the bakery. The Revent computer has a built in modem for easy communication with the PC via two wire lead. A short distance modem with RS232 interface at the remote location and program for the PC (supplied by Revent) is needed. This connection enables the remote programming to be activated. Information from the ovens can be stored and analysed.

Temperature control

Several temperature levels are needed during the baking cycle; normally a high starting temperature for a good rise, lower actual baking temperature and a higher final temperature which prepares the oven for the next bake. The Revent computer allows six controlled temperature changes. It is vital that the change from one temperature to another within a specified time period is fully controlled by the computer. Assume that your computer is programmed to bake a full rack of product to your satisfaction. If you were to bake a half filled rack manually using the same parameters, the temperature change would be quicker and you would have to

Automatic morning start up

Many bakers want to make up tomorrow's first bake and then roll it into the retarder/prover before leaving for the day.

The Revent computer starts up the oven automatically to reach the required temperature for the next mornings bake thus avoiding unnecessary waiting time. The Revent computer permits programming with different parameters for all days of the week starting with different products from morning to morning. And what if you forget to reprogram it before you go on holiday? No problem! The Revent computer is switched off automatically if not used within two hours.

Easy to understand and operate

Even if oven operators are unfamiliar with computers, the Revent computer displays a menu that takes the operator step by step through program setups and then refuses to accept wrong commands.
