Ecostar Pastry Brake/Dough Sheeter The Ecostar Pastry Brake/Dough Sheeter is a baker's dream come true. Whether controlled manually or fully automatically, the pastry is sheeted fast, expertly and easily.

For repetitive operations, automatic sheeting is recommended. Conversely, single billets and special doughs are best processed with manual control, using individual steps.

     
MAKING PASTRY SHEETING EASIER FOR THE CRAFT BAKER
For products such as pizzas or tart bases which require specific reduction steps, Ecostar pastry brakes feature the unique «Man/Auto» mode. Manual control is used to select the ideal reduction steps. After the result has been satisfactorily tested, the machine memorises these steps and converts them into an automatic program.

All parts that need cleaning are easily accessible. The photo cells are equipped with a self-cleaning mechanism. At the end of each program, a wiper frees them from dough and flour.

The scrapers prevent dough sticking to the rollers. Even thin and delicate dough sheets do not tear. 

Ecostar is a truly universal machine handling all sorts of doughs from puff to croissant and Danish, from yeast to short crust and pizza doughs.

     
AUTOMATIC OPERATION
Ecostar is a user friendly computer-controlled machine for automatic operation. The operator selects one of twenty programs and the machine performs the sheeting fully automatically. Dough and pastries are guaranteed uniform processing through precise control and gentle handling. Programming is simplicity itself and requires neither special knowledge nor intensive training.

Under program control flour is dusted evenly and accurately over the dough sheet, using less flour and ensuring that less is distributed into the atmosphere. 

     
MANUAL OPERATION
Ecostar also excels as a mechanical sheeter with automatic control. The ingenious turning knob allows quick, easy and precise roller setting. In manual mode, the photo cells remain active and the dough band is automatically stopped after passing through the rollers. Therefore, the reduction step for the subsequent pass can be pre-selected while the machine is still in operation. This makes manual sheeting faster than with conventional machines.

Motorised roller gap reduction provides; 20 automatic programs, 9 man/auto programs, manual reduction steps.
